What Grease Actually Does to Your Drain (and Your Septic Tank)
Short version: grease poured down a drain doesn't leave. It travels a little way, cools, hardens back into fat, and sticks to the inside of the pipe. Then it starts collecting everything else that goes past. On a city sewer that eventually becomes a backup somebody has to jet out. On a septic system it becomes a scum layer that crowds your tank and can eventually clog the drain field, which is the expensive one.
Everybody has heard "don't pour grease down the drain." Almost nobody has heard WHY in a way that actually sticks, which is probably why so many of us have done it anyway. So here's the mechanism, the warning signs, and the part where hot water doesn't save you.
The mechanism: your pipes are colder than your skillet
Bacon fat is liquid at 200 degrees and solid at room temperature. That's the whole story, really. Everything that goes wrong follows from that one fact.
When you pour warm grease down the drain, it's a liquid for as long as it's warm. It sails through the trap, down the branch line, and out toward the main. Somewhere in there it hits pipe that's sitting at 55 degrees under your slab or out in the yard, and it does exactly what it does in a pan you left on the stove overnight: it sets up.
Now you've got a thin coating of fat on the inside of a pipe. On its own, that's not a clog. But fat is sticky, and everything else in your wastewater is not. Coffee grounds, rice, eggshell fragments, lint, hair, the shreds off a scrubby sponge. All of it hits the greasy patch and stops. Each pass adds a layer. That's why grease clogs never announce themselves; they build for months and then fail all at once, usually on a holiday.
At city scale, this same process is what builds the things the news calls fatbergs: masses of congealed cooking fat bound together with wipes and debris, big enough that crews cut them out in pieces. Fats, oils, and grease (the utilities all shorten it to FOG) are the leading cause of sewer overflows across most of the country.
Why hot water and dish soap don't actually help

If you're on septic, the math gets worse
A septic tank works by separation. Solids settle into a sludge layer at the bottom, lighter material floats into a scum layer at the top, and the relatively clear water in the middle moves out to the drain field to be filtered by soil. Bacteria eat through the organic material over time and keep the whole thing in balance.
Grease doesn't play along. It doesn't break down the way other waste does, so it just accumulates in that scum layer and gets thicker. Three things follow:
- Your tank gets smaller. Not literally, but the working volume shrinks as the scum layer grows, which means less settling time and more untreated material heading out.
- You pump more often. Which is a real recurring cost, and one you're paying for grease you could have put in a trash bag.
- Grease reaches the drain field. This is the one that hurts. Fat coats and clogs the soil pores your drain field depends on, and soil that stops percolating doesn't recover on its own. Drain field replacement is a five-figure project in most places.
Septic professionals are blunt about it: there is no amount of cooking grease that's good for a septic system. Not bacon fat, not olive oil, not butter, not the "small amount" that rinses off a plate. It all ends up in the same place.

A camper's gray tank is small, its plumbing is small, and it lives outdoors where things get genuinely cold. Grease that would take a house six months to feel can seize up an RV drain in a season, and a clogged gray tank on the road is a problem with no good solutions and no plumber. The early warning signs, before it's a service call
- The kitchen sink drains slower than the bathroom sink. Same house, same age of plumbing, different drain speed means the difference is what you're putting in it.
- A gurgle after the water goes down. That's air moving past a partial obstruction.
- A faint sour smell from the drain that comes back after you clean it. Rancid fat in the line, not food in the trap.
- You've started plunging the kitchen sink "every once in a while." Every once in a while is how a grease clog introduces itself.
- Septic homes: pump-out intervals getting shorter, or a service tech mentioning a thick scum layer.
What to do instead (it takes about four seconds)
Pour the grease into something you can seal and throw away. That's genuinely the whole answer, and the only real trick is keeping that something within reach of the stove, because the reason grease goes down the drain isn't ignorance. It's that the sink is right there and the container is in a cabinet behind the stand mixer.

FAQ: what we get asked about grease and drains
Does grease really clog drains, or is that an old wives' tale?
It really does. Cooking fat is liquid when warm and solid at room temperature, so it flows down the drain and then hardens on the inside of cooler pipe. Once there's a sticky coating, passing solids like coffee grounds and food scraps catch on it and the blockage builds up in layers over months.
Is a small amount of grease okay for a septic system?
No amount is genuinely good for it. Fats, oils, and grease don't break down in a septic tank the way other organic waste does. They accumulate in the scum layer, reduce the tank's effective capacity, shorten the interval between pump-outs, and can eventually migrate into the drain field and clog the soil there.
Will hot water and dish soap flush grease through the pipes?
No. Hot water keeps grease liquid only as long as the water is running, so it moves the problem further down the line instead of solving it. Dish soap emulsifies fat temporarily, but once it's diluted and cooled downstream, the fat separates out again and coats the pipe.
How do I know if I already have a grease clog?
The usual signs are a kitchen sink that drains noticeably slower than other drains in the house, gurgling after the water goes down, a sour smell that returns after cleaning, and needing to plunge the kitchen sink now and then. On septic systems, pump-out intervals getting shorter is another signal.
